Healthy, Happy, and Hip Winter Kale Salad

Prep time: 15 minutes

Yields: 10 people

Ingredients: 

Salad:

  • Big bowl of raw kale
  • 1 Sweet potato
  • 1/2 Cup walnuts
  • 1/4 Cup dried cherries
  • 1/4 Cup raw unsweetened coconut flakes

Dressing:

  • Salt
  • Pepper
  • Balsamic vinegar to taste

Directions: 

  1. Start by massaging the kale while shredding until the color brightens.
  2. Roast sweet potato and toast walnuts.
  3. Mix in ingredients.
  4. Mix in dressing.
