This salad is is easy to make, welcomes lots of additions and changes but is a great blueprint for a healthy meal.  Packed with greens, grains, nuts, seeds and flavor it can be made ahead and eaten warm or cold- perfect to bring for lunch! And the dressing is great on lots of salads!

1 cup quinoa (some brands need to be rinsed first- check) I use red quinoa
2 cups water
1 T olive oil
1 tsp sea salt
2 cups(or more) baby spinach, arugula or baby kale- or a combination
2-4 Tbsp dried fruits, cut up if large- currants, dried apricots, raisins, sun-dried tomatoes
2-4 Tbsp nuts and seeds- choose from almonds, walnuts, pistachios, hazelnuts, sesame seeds, pumpkin seeds, sunflower seeds or a combination of them
½ cup dressing or to taste
