1/4 cup tahini
juice of 1 lemon (2 tablespoons)
2 cloves garlic, minced
salt and pepper, to taste
water to thin (add 1 tablespoon at a time)
Combine all ingredients in a bowl with a whisk or jar and mix well. It may take some effort to incorporate the tahini in the liquid, be gentle and it will all come together. Season. Add a pinch of cayenne or cumin as desired.
