Raspberry Mousse

2 cups frozen raspberries
1 cup raw cashews
½ cup full fat coconut milk
2 T lemon juice
1 T raw honey or 5 drops liquid Stevia
water if needed to help things blend

Preparation:

Boil 2 cups of water and pour over raw cashews to soften. Allow to sit about 30 minutes.Drain. Add ingredients in the order listed to a blender or food processor and mix until blended. Try blending without the water first and add only if it needs more liquid to mix properly. Chill for at least 30 minutes and enjoy!

Serves 4.
