Eating Clean During Busy Weeknights

In this day and age, it is uncommon to NOT be constantly on the go.  It can be exhausting to balance all of your responsibilities, let alone meal planning.  Planning is your best chance of making healthy choices for you and your family. Check out these great ideas for clean eating during busy weeknights: 

Make Your Own Salad Bar
Everyone loves designing their own dinner. Put out a big bowl of greens and small bowls of toppings and let everyone help themselves. Small bowls can be anything from grilled shrimp to sunflower seeds to blueberries to sliced fennel. Have fun and enjoy it!

Spaghetti Squash or Zoodles Topped with Meatballs
Spaghetti squash is underutilized but so tasty.  Substitute noodles with spaghetti squash or zoodles which are zucchini noodles..  Add sauce and top with meatballs, seared broccoli, or mushrooms and with only a little bit of prep, you have a healthy, delicious meal!

Maple Baked Salmon
Salmon is a treat and can be so simple to make.  Add some sweetness with a bit of maple syrup and combine it with melted coconut oil, Dijon mustard, and 2 cloves of garlic for a layered taste.  Bake for 15-20 minutes and you’ll have yourself a new favorite meal!

Slow Cooker Chili
Don’t you love walking into your home and smelling dinner ready for you?  Then try out slow cooker chili! Prep the night before or in the morning, and allow to simmer and perfect all day long.  Throw in some of your favorite beef (or try turkey!), onion, crushed tomatoes, kidney beans, beef broth, garlic, lime juice, and your favorite spices. 

One Pan Chicken Sausage and Veggies
Make clean up easy by cooking all of your ingredients in one pan - like with chicken sausage and veggies.  Cut up the sausage and your favorite roasted veggies, and season to your taste. Bake in the oven and enjoy a flavorful treat!
