Hemp and Citrus-Shallot Dressing

Here is a great all-purpose creamy salad dressing that is SUPER healthy and you can use it on just about any greens, veggies, grains, even add some cooked chicken or flaked salmon if you are into that. Hemp seeds, a great form of protein, can be eaten raw, sprinkled on salads, granola, and yogurt as well as whipped into a delicious creamy dressing that has so many flavor variations and takes just a few minutes to prepare.

Juice of 1 lemon
Juice of 1 lime
Juice of 1 orange
½ shallot
½ clove garlic
1/3 cup hemp seeds
1 t honey (more or less to taste)
good pinch sea salt
fresh pepper

Blend well in blender. Taste and adjust as you like.  Store in the refrigerator.

optional: fresh parsely, cilantro, chives or basil, Dijon mustard, more honey

Try it with cilantro and minced jalapeno over greens with diced avocado and grape tomatoes, or with fresh basil drizzled over spinach and roasted peppers, artichoke hearts and olives, any salad greens.
