Healthy, Happy, and Hip Summer Kale Salad

Prep time: 15 minutes

Yields: 10 people

Ingredients: 

  • Big bowl of shredded kale
  • Pineapple chunks as you like
  • 1 Small cucumber
  • 1/2 Cup chopped pecans
  • 1 Red onion
  • 1 Lemon
  • 1 Tbl. Olive oil
  • Salt
  • Pepper

Optional Ingredients:

  • 1 Tomato
  • 1/2 cup Goat Cheese
  • can of Beans
  • Fresh Herbs
  • 1 Avocado

Directions: 

  1. Start by massaging the kale while shredding until the color brightens. 
  2. Mix in ingredients.
  3. Squeeze in juice from the lemon.
  4. Mix in whatever optional ingredients you desire from the list above.
